Fancy AF Genovese Pasta with Bone Marrow | Cookin' Somethin' w/ Matty Matheson

Genovese is a delicious and underrated dish that deserves more recognition. This recipe will guide you through the process of making this succulent and meaty meal. Here are the ingredients you'll need:
- ¼ cup olive oil
- 3 pounds yellow onions, sliced into half moons
- 1 carrot, peeled and cut into 2-inch pieces
- 1 celery rib, cut into 2-inch pieces
- 2 ½ pounds boneless stewing beef, such as chuck or short ribs, cut into large pieces
- 4 cups chicken stock
- ¾ cup dry white wine, divided
- Kosher salt and black pepper, to taste
- 1 pound ziti
- Powdered Parmesan cheese
Here's how to cook it:
1. Preheat the oven to 475F and roast the bone marrow until fully cooked.
2. In a large Dutch oven over medium heat, add the olive oil, blended carrots, celery, and a pinch of salt. Cook for 3-4 minutes until the carrots and celery start to brown.
3. Add the onions and cook for an additional 5-6 minutes until the edges of the onions brown.
4. Add the beef, kosher salt, black pepper, half of the white wine, and enough chicken stock to cover halfway up the pot. Add a few pieces of bone marrow and bay leaves.
5. Cover the pot with a lid and place it in the oven at 350F. Cook for 1 ½-2 hours until the beef becomes fork-tender.
6. Remove from heat and shred the beef with forks once it has cooled down. Cover with a lid.
7. In a separate large pot, bring water to a boil and add salt. Cook the ziti until al dente. Reserve ¼ cup of pasta water if needed, then drain the pasta.
8. Heat a medium skillet over medium heat and add a portion of the onion and beef mixture, along with some bone marrow. Simmer, then add a portion of pasta and pasta water if necessary. Stir gently to coat the noodles with the sauce and cook for 2 minutes.
9. Transfer to a plate and sprinkle with Parmesan cheese.
