Thierry Coursier had a good life as a logistics worker. His salary was great, his work was comfortable and he sat at a desk all day. But, Thierry wasn’t happy. He gave up his 9-to-5 to chase his dream of becoming a traveling knife grinder. Traversing small roads through Paris, Thierry goes from restaurant to butcher to fishmonger, sharpening knives, scissors and everything in between.
